Today, I bring you an equally traditional and delicious Jamaican dinner, Escovitch fried fish covered in a pickled peppery sauce and is complete deliciousness. Bad man nah use recipe lol, so I hope that my pictures plus an online recipe and tutorial can assist you with preparing this dish if you choose to try this at home... although, I'm not certain I would trust any Jamaican who uses true measurements.. that's just not how we do.
First, I sliced onions and peppers which were combined in a sauce pan on low with the thyme, vinegar, black pepper, and Lawry's seasoning salt.
I then cleaned this fish really well with lemon. My choice for Escovitch is porgies. I love porgies! But this is not the best choice for those who fear bones.
Season liberally with onion & garlic powder, cayenne pepper, black pepper, and Lawry's seasoning salt and fry in really hot oil until it has achieved a nice golden brown. #blackexcellence
I decided on a side salad for today's veggies which requires homemade salad dressing. Salad dressing is way too easy to make, to buy bottled varieties and when it's homemade, you know exactly what went in it. To make this dressing combine the following until you achieve your desired taste: honey, lemon, fresh garlic, and onions, paprika, black pepper, vinegar, vegetable oil, ketchup, and mayonnaise.
