I spent the weekend in NYC and ate out over the span of a few days more than I do in an entire month. Although my options were fairly healthy, I felt like I was in desperate need of something super fresh and super healthy. I began craving black bean soup last night and this morning thought about adding sweet potato to it as well. Lunch was amazing today...

Vegan Black Bean and Sweet Potato Soup with Tostones and Avocado. 


Nat's Confessions:

Cilantro, avocado, onion, green plantain, sweet potato, tomato, black beans, and garlic.

I have no idea how many beans I used.. I'm guessing a cup and a half.
​Combined the beans and water in my pressure cooker for 30 minutes.

Heated up some olive oil, added my veggies and seasoned with onion powder, garlic powder, sea salt, and black pepper.

Added the black beans and the liquid. And seasoned again with onion powder, garlic powder, sea salt, and black pepper.

Added the precooked sweet potato and seasoned again with onion powder, garlic powder, sea salt, and black pepper.

This should really be called Vegan Black Bean, Rice, &  Sweet Potato Soup with Tostones and Avocado. 
I just couldn't resist making a small pot of rice.
