For the salad, I combined spinach, red and yellow peppers, strawberries, avocado and Trader Joe's Chèvre with Honey, topped with homemade creamy balsamic vinaigrette . To make the dressing, combine balsamic vinegar, mayonnaise, fresh garlic, dijon mustard, sea salt, black pepper, and sugar and whisk until evenly blended. I don't have exact measurements.. I just add variations of the previously mentioned ingredients until I get a desired taste.
I'm not quite ready to part with my rice recipe.. for now you'll just have to take my word that it is ahhhmazing.. or even better come over for a plate.
For the salmon, I brushed each side with olive oil and lemon juice and sprinkled generously with sea salt. I cooked each side for about four minutes on my cast iron skillet.
